Will removing my catalytic converter from my 2005 ford f250 6.0 diesel hurt the engine or the truck?

No it wont hurt anything. There are people that run a 5 inch pipe from the turbo all the way through with no muffler, cat or anything. It'll actually be a good thing by keeping the engine run at a cooler temperature, less back pressure more turbo response as well.
